Developed in Germany in the 1860’s, this flat, saucer-shaped beet was refined by Josiah Crosby, a Boston-based market farmer. An early variety that produces a heavy yield of delicious beets, it is excellent boiled, baked, or pickled. Enjoy the tops and nutritious roots chopped up in a salad.
SOWING…Plant seeds in cooler weather, when soil is above 40 degrees F, about 4 weeks after the last hard frost. Plant seeds ¾ inch deep and 1 inch apart, in rows approximately 12 to 18 inches apart. Cover seeds with 1 ½ inches of soil, well pressed down. Water well at planting time.
THINNING…When plants are 4 to 6 inches tall, thin to 4 to 6 inches apart, in rows 12 to 18 inches apart.
GERMINATION…Germinates in 7 to 14 days depending on soil and temperature conditions.
REMARKS…Young beet tops make excellent greens. For beets all summer, stagger your plantings about every 3 weeks.
