Garden Fresh Pizza Sauce

In a large nonstick saucepan, saute the mushrooms, onion and peppers in oil until tender.
 Stir in the tomatoes, tomato paste, water, sugar, basil, oregano, garlic powder and salt.
Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour or until sauce reaches desired thickness, stirring occasionally.
Stir in pepper; cook 5 minutes longer. Spread desired amount over a pizza crust, or cool and then refrigerate or freeze.
Sauce may be frozen for up to 3 months. Yield: 6 cups.

Garden Fresh Pizza Sauce #2

2 tablespoons extra-virgin olive oil
2 teaspoons minced garlic
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh basil
1/2 teaspoon chopped fresh marjoram
3 cups (7 to 11) Roma tomatoes, ground
Salt to taste

Heat oil in small skillet over low heat. Add garlic; cook until golden. Add oregano, basil and marjoram.
In stainless steel bowl, combine tomatoes and olive oil mixture; mix well. Season to taste with salt.

Makes 3 cups sauce.
