Herb Marinated Grilled Vegetables

Marinade

3/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon fresh rosemary; chopped, or 1/2 teaspoon dried rosemary
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
1 teaspoon fresh basil; chopped, or 1/2 teaspoon dried basil
1 teaspoon fresh oregano; chopped, or 1/2 teaspoon dried oregano
1 tablespoon garlic, minced
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Vegetables

2 pounds assorted vegetables, left whole if small or cut in half

Marinade - whisk together all ingredients in a small bowl. Arrange the vegetables in
shallow dish or plastic container, pour the marinade over them, cover and refrigerate for 2 hours.

Prepare a grill. Remove the vegetables from the marinade (reserve marinade).
Grill the vegetables 6 inches away from the heat source until they are tender,
brushing them with the marinade as they cook. Cooking times will vary according to the vegetables.

Grilled Fresh Herb Hamburger Recipe

2 pounds ground beef (80/20 fat to lean ratio works well)
2 TBS fresh basil chopped
1 1/2 TBS fresh thyme chopped
1 1/2 TBS fresh chives chopped
1 1/2 TBS fresh rosemary chopped
¼ tsp salt
¼ tsp pepper
2 TBS lemon juice
1 egg (lightly beaten)
1 cup crisp dry bread crumbs

Directions:

Place the meat in a large bowl and break apart. If you’re using frozen ground beef, be sure it is completely thawed.

Sprinkle basil, thyme, chives, rosemary, salt and pepper over meat.
Add lemon juice and lightly beaten egg.  Add bread crumbs.  Use you hands to mix in the seasonings, lemon juice, egg and bread crumbs.
Mix well.

Divide meat into 8 equal sections. Pat out into burger shapes.

Grill to desired doneness over medium coals or heat.

It's fine to substitute other herbs in your herb grilled burgers. Go light the first time (around 1 TBS).
 Increase amounts as you find what flavors you enjoy in your burgers.

Try some fancy buns or bread with your herb burgers. The harder breads work best if you want to heat them on the grill before serving the hamburgers.
Just brush the buns with a little vegetable or olive oil and sprinkle on some herbs. Place bread on the grill until you see grill marks.
 Flip. Very simple. This makes the burgers look extra special.
